I think the older I’ve got the more I see a persons qualities rather than their flaws, and I’m definitely more open minded as I’ve got older .

I'm only fussy in so far as if the PW pics are showing someone much less pretty than my wife then I'm thinking why bother? These affairs are risky so there has to be reward over risk

I wouldn’t say I’m fussy, but do know what I don’t want (not always what I want though 😏). Being in my 50s, I now have no responsibilities, and don’t want to be tied down into a relationship that involves commitment, but I’m also not prepared to settle or make do now….

I don't see it as mutually exclusive. You can be hard to please, but also open minded... surely it just means that you are more prepared to experiment as you get older, but that willingness doesn't mean that you are pleased more easily...
